Abstract
Componentes estabilizados que proveen aromas tales como chocolate, te o café, que están estabilizados contra la pérdida o degradacion de las características sensoriales o de sabor deseadas de su aroma durante el almacenamiento. El agente estabilizante está presente con el componente que provee aroma en una cantidad eficaz para interactuar químicamente con los compuestos en el componente que provee aroma para (a) proveer cantidades aumentadas de compuestos deseables que imparten características sensoriales o de sabor deseables al aroma o (b) reducir la cantidad de compuestos indeseables que suprimen las características de sabor deseadas o que contribuyen o generan características sensoriales o de sabor indeseables en el aroma. Preferentemente, el agente estabilizante es un nucleofilo que contiene azufre o nitrogeno, tal como dioxido de azufre, sulfitos, sustancias o compuestos que contienen o generan sulfitos, tioles, aminas o aminoácidos, cisteína, gluation o una enzima. El componente estabilizado que provee aroma retiene las características sensoriales o de sabor deseables del aroma por un período de al menos seis meses a un ano o más.
