Abstract
1. Способ получения функционального белково-витаминного продукта, включающий термокислотную коагуляцию белка в белковой дисперсной системе посредством раствора органической кислоты, отделение сыворотки, отжим влаги от полученного белкового сгустка с последующим его формованием, отличающийся тем, что термокислотную коагуляцию белка в белковой дисперсной системе осуществляют 5%-ным раствором аскорбиновой кислоты в соотношении белковая дисперсная система:раствор аскорбиновой кислоты, равном 1:0,1 при температуре 55-60°С, а полученный белково-витаминный сгусток подвергают формованию. ! 2. Способ по п.1, отличающийся тем, что в качестве белковой дисперсной системы используют растительное молоко - соевое или кокосовое или молоко животных или смесь молока из сырья растительного и животного происхождения. ! 3. Способ по п.1, отличающийся тем, что отделенную сыворотку смешивают с овощными пастами в соотношении 1:1. 1.
