Abstract
Способ получения белково-витаминных продуктов на основе сои, включающий приготовление белковой дисперсной системы с последующей коагуляцией белка в ней раствором органической кислоты, отделением коагулята от сыворотки, отличающийся тем, что белковую дисперсную систему готовят путем совместной дезинтеграции соевого и лукового компонентов в водной среде при весовом соотношении как 1:1:8, а в качестве коагулирующего раствора органической кислоты используют 5%-ный водный раствор или аскорбиновой, или янтарной, или молочной, или яблочной кислот, или их композиций, или их комбинаций, при этом отделенный коагулят доводят до влажности 10-80%, а на основе сыворотки готовят белково-витаминно-ликопиновый напиток, путем ее смешивания с томатной пастой, содержащей 25-30% сухих веществ в весовом соотношении сыворотка:паста как 1:1.A method for producing protein and vitamin products based on soy, comprising preparing a protein disperse system followed by coagulation of the protein in it with an organic acid solution, separating the coagulate from serum, characterized in that the protein disperse system is prepared by the joint disintegration of soy and onion components in an aqueous medium by weight in a ratio of 1: 1: 8, and as a coagulating solution of an organic acid, a 5% aqueous solution of either ascorbic, or succinic, or milk, or apple ki is used lot, or their compositions, or their combinations, while the separated coagulum is brought to a moisture content of 10-80%, and protein-vitamin-lycopene drink is prepared on the basis of whey by mixing it with tomato paste containing 25-30% dry matter in weight serum: paste ratio as 1: 1.
