Abstract

Se refiere a un producto helado aireado sin emulsionador agregado y de preferencia sin estabilizador agregado y que posee un contenido graso de 1 a6% que cumple con las siguientes condiciones: (a) % de GD superior o igual a [0,6 x %G]; (b) %de PM100 inferior o igual a 100% - [5,35 x %G] y (c) unadistribucion del tamano de las células de aire tal que el tamano promedio de la célula de aire sea inferior a 40 micrones con una desviacion estándarinferior a 20 micrones; donde GD = grasa desestabilizada; G = grasa; PM100 = pérdida de masa luego de 100 minutos. Además, refiere a procedimientos parapreparar dicho producto.
