Abstract
Se describe un articulo de confitería helada a base de helado de agua de textura blanda en la parte central que comprende una parte central de helado de agua que contiene 20 a 40% en peso de materias secas, de volumen aumentado a una tasa de 20 a80% y cuya textura es semejante a la de una crema helada extruida, la parte central contiene trozos de tamano de 1 a 10 mm y está recubierto con una composicion grasa, especialmente una cobertura de chocolate. También se describe el procedimientopara preparar dicho artículo de confitería helada. Se procede al llenado del molde, mantenido en una atmosfera refrigerada, con una composicion de helado de agua congelada aumentada a una tasa de 20 a 80% que contiene, en caso necesario, trozos yque constituye la parte central del articulo, en caso necesario, se introduce un palito, se endurece la parte central, se la desmolda y se le recubre con una composicion grasa, especialmente una cobertura de chocolate.
