Abstract

Un método y composición que comprende almidón hidrolizado. En un primer aspecto, el método comprende varios pasos. Un primer paso comprende combinar al menos una porción de legumbre y una enzima adecuada para formar una mezcla inicial de enzima-legumbre. La mezcla inicial de enzima-legumbre comprende almidón. Un segundo paso comprende calentar la mezcla inicial de enzima-legumbre hasta entre aproximadamente 48.89 °C y aproximadamente 93.33 °C para comenzar a hidrolizar el almidón, proporcionando por ello una mezcla de legumbre calentada. Un tercer paso comprende extruir la mezcla de legumbre calentada para continuar hidrolizando el almidón y además gelatinizar y cocer la mezcla de legumbre calentada, proporcionando por ello un producto de legumbre que comprende almidón gelatinizado, hidrolizado. En un segundo aspecto, la invención proporciona una composición que comprende al menos una porción de legumbre y la al menos una porción de legumbre comprende almidón gelatinizado, hidrolizado.
