Abstract
La presente invención pertenece a métodos para preparar almidón hidrolizado enzimáticamente para uso como un agente estabilizante que incluye las etapas de primero gelatinizar un almidón después, hidrolizar el almidón gelatinizado con una enzima la cual tienen actividad endohidrolítica.
