Abstract

La invención se refiere a un concentrado salado que contiene: a) 22 a 85% en peso de sal inorgánica; b) 2 a 60% en peso de grasa; c) 0,8 a 8% en peso de goma xantano; d) 0 a 25% en peso de un componente de glutamato; e) 0 a 25% en peso de un componente de almidón; f) 0 a 20% en peso de azúcar; g) 0 a 45% en peso de materia vegetal; h) 0 a 10% en peso de agua; en donde los componentes a) a e) juntos constituyen al menos 55% en peso del concentrado salado y en donde los componentes a) a h) juntos constituyen al menos 75% en peso del concentrado salado. Este concentrado salado puede ser usado adecuadamente en la preparación de caldo, consomé, sopa, salsa o salsa de carne, y no sólo imparte sabor y potencia el sabor, sino que adicionalmente mejora el aspecto y la textura del producto final.
