Abstract
Se proporciona un método para producir alimento deshidratado a base de carne para ser reconstituido al verterle agua caliente o fría antes de ser ingerido, que comprende: un paso de procesamiento con vapor sobrecalentado de una materia prima o alimento a base de carne; un paso de congelación de la materia prima de carne o alimento a base de carne procesado con vapor sobrecalentado; y un paso de deshidratación a presión reducida de la materia prima de carne o alimento congelado a base de carne. Es posible reconstituir el alimento deshidratado producido mediante el método de producción en un período de tiempo corto de aproximadamente 3 a 5 minutos, incluso si el alimento deshidratado es grueso.
