本发明公开了一种生产南瓜籽油的加工方法,包括晾晒、碾磨、保温、制饼、蒸煮、压榨、过滤步骤,具体是取老南瓜籽,对其进行晾晒,得干燥南瓜籽仁,用碾碎机进行碾碎后密封于容器中,在55±5℃的条件下保温2小时,做成饼后放置在蒸笼内,通过水蒸气蒸煮,蒸煮后进行压榨即得毛油,再将毛油沉淀36—48小时后进行过滤,即得到成品油。本发明南瓜籽油风味浓郁、柔和,其单不饱和脂肪酸较高,长期使用有利于身体健康,具有较高营养价值和保健养生作用。

本发明涉及一种食用油的加工方法,具体涉及一种以南瓜籽为原料生产南瓜籽油的加工方法。
背景技术
南瓜籽油是最益于人体健康的食用油之一,它具有较强的保健功效,可抑制血栓性疾病,预防心肌梗死和脑梗死,延缓动脉硬化,能增强智力,提高记忆力,保护视力,改善睡眠,降低血脂;同时,具有减肥功能,降血压,抑制出血性脑中风,软化血管,预防过敏,预防肝炎、肝硬化,抗衰老,能明显提高超氧化物歧化酶活力,是人们日常生活中离不开的必备产品;南瓜籽油中还含有人体不可缺少的锌、锰、铬等微量元素,特别适宜亚健康人群食用。经常食用南瓜籽油还可提高人体皮肤的生理活性,更有防辐射的作用,从而使营养成分的存留达到最大化。人们经常食用可降低脂肪提高免疫力。
目前,南瓜籽油的生产方法有水代法、压榨法。传统的水代法工艺为:清籽、润籽、炒籽、扬烟、兑浆搅油、震荡分油等步骤,制取的南瓜籽油风味浓郁、柔和,但其劳动强度大,产生大量的废水且不能实现连续化生产,发展受到制约。后来发展起来的机榨工艺为:清籽、炒籽、扬烟、调质、压榨、过滤、沉淀等步骤,虽然弥补了水代法的不足,具有自控程度高,可以连续化生产等优点,但是制取的南瓜籽油风味没有水代法制取得南瓜籽油柔和、纯净。传统的南瓜籽油加工方法大多是将经过烘炒成熟后,经高温压榨而产出南瓜籽油,所产油的营养成份和活性物质会受到损失,且产油率和油质都会受到影响,其天然的清香味也会受到影响。
发明内容
本发明的目的在于提供一种生产南瓜籽油的加工方法,该方法生产出的南瓜籽油风味浓郁、柔和,且营养丰富,可以连续化生产。
本发明一种生产南瓜籽油的加工方法,包括以下步骤:
a翻炒:取老南瓜籽,对其进行晾晒,控制含水率3%—5%,得干燥南瓜籽;
b碾磨:将步骤a的干燥南瓜籽通过碾碎机进行碾碎,得南瓜籽碾粒;
c保温:将步骤b的南瓜籽碾粒密封于容器中,在55±5℃的条件下保温2小时;
d制饼:将步骤c的保温南瓜籽碾粒做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮0.5—1小时;
f压榨:将步骤e蒸煮后的南瓜籽饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀36—48小时后进行过滤,即得到成品油。
所述的步骤g中毛油过滤是将毛油均匀经过板框过滤机过滤,以除去杂质。
上述技术方案的优点体现在:
本发明是以纯天然老南瓜籽为原料制备,不添加任何有害成分,属于绿色健康食品;制备的产品不饱和脂肪酸含量高,并保留有维生素、钙、亚麻酸等有益成分;制备过程简单,生产成本低,特别是工艺条件温和,可以充分保留老南瓜籽的原始营养成分;出油率高,得到的南瓜籽油不含有有机溶剂,南瓜籽油中的各种有效成分不受破坏,使用价值较高;除含有丰富的不饱和脂肪酸,如亚麻酸、亚油酸外,还含有植物甾醇、氨基酸、维生素、矿物质等多种生物活性物质,尤其是锌、镁、钙、磷含量极高。
具体实施方式
下面结合具体实施例对本发明一种生产南瓜籽油的加工方法做进一步说明。
实施例1:
a晾晒:取老南瓜籽,对其进行晾晒,控制含水率3%—5%,得干燥南瓜籽;
b碾磨:将步骤a的干燥南瓜籽通过碾碎机进行碾碎,得南瓜籽碾粒;
c保温:将步骤b的南瓜籽碾粒密封于容器中,在50℃的条件下保温2小时;
d制饼:将步骤c的保温南瓜籽碾粒做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮0.5小时;
f压榨:将步骤e蒸煮后的南瓜籽饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀36小时后进行过滤,制得成品油460公斤。
实施例2:
a晾晒:取老南瓜籽,对其进行晾晒,控制含水率3%—5%,得干燥南瓜籽;
b碾磨:将步骤a的干燥南瓜籽通过碾碎机进行碾碎,得南瓜籽碾粒;
c保温:将步骤b的南瓜籽碾粒密封于容器中,在60℃的条件下保温2小时;
d制饼:将步骤c的保温南瓜籽碾粒做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮1小时;
f压榨:将步骤e蒸煮后南瓜籽饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀48小时后进行过滤,制得成品油505公斤。
本发明所制备的南瓜籽油,其单不饱和脂肪酸较高,长期使用有利于身体健康;此外,还含有植物甾醇、氨基酸、维生素、矿物质等多种生物活性物质,尤其是锌、镁、钙、磷含量极高,具有良好的延迟人体细胞衰老、保持青春的功能;经常食用,可以起到强身壮体、延年益寿的作用。

1.一种生产南瓜籽油的加工方法,包括以下步骤:
A晾晒:取老南瓜籽,对其进行晾晒,控制含水率3%—5%,得干燥南瓜籽;
b碾磨:将步骤a的干燥南瓜籽通过碾碎机进行碾碎,得南瓜籽碾粒;
c保温:将步骤b的南瓜籽碾粒密封于容器中,在55±5℃的条件下保温2小时;
d制饼:将步骤c的保温南瓜籽碾粒做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮0.5—1小时;
f压榨:将步骤e蒸煮后的南瓜籽饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀36—48小时后进行过滤,即得到成品油。
2.根据权利要求1所述的一种生产南瓜籽油的加工方法,其特征在于:所述的步骤g中毛油过滤是将毛油均匀经过板框过滤机过滤,以除去杂质。
