Abstract
本发明公开了一种生产芝麻油的加工方法,包括晾晒、碾磨、保温、制饼、蒸煮、压榨、过滤步骤,具体是取去壳的芝麻仁,对其进行晾晒,得干燥芝麻仁,用碾碎机进行碾碎后密封于容器中,在55±5℃的条件下保温2小时,做成饼后放置在蒸笼内,通过水蒸气蒸煮,蒸煮后进行压榨即得毛油,再将毛油沉淀36—48小时后进行过滤,即得到成品油。本发明芝麻油风味浓郁、柔和,其单不饱和脂肪酸较高,长期使用有利于身体健康,具有较高营养价值和保健养生作用。

技术领域
本发明涉及一种食用油的加工方法,具体涉及一种以芝麻为原料生产芝麻油的加工方法。
背景技术
麻油是一种中国传统的食物油,中医认为:芝麻具有滋阴养颜、温补脾胃的功效。现代医学证实:芝麻油中富含的不饱和脂肪酸,所以更易被人体吸收,有保护血管、延缓衰老、润肠通便、减轻烟酒毒害、保护嗓子的功效;对口腔溃疡、牙周炎、牙龈出血、咽喉发炎均有很好的改善作用;同时,麻油口感好、香气浓,因此小磨麻油深受消费者的喜爱,成为日常生活中不可缺少的调味品。
目前,芝麻油的生产方法有水代法、压榨法。传统的水代法工艺为:清仁、润仁、炒仁、扬烟、兑浆搅油、震荡分油等步骤,制取的芝麻油风味浓郁、柔和,但其劳动强度大,产生大量的废水且不能实现连续化生产,发展受到制约。后来发展起来的机榨工艺为:清仁、炒籽、扬烟、调质、压榨、过滤、沉淀等步骤,虽然弥补了水代法的不足,具有自控程度高,可以连续化生产等优点,但是制取的芝麻油风味没有水代法制取得芝麻油柔和、纯净。传统的芝麻油生产工艺大多是将经过烘炒成熟后,经高温压榨而产出芝麻油,所产油的营养成份和活性物质会受到损失,且产油率和油质都会受到影响,其天然的清香味也会受到影响。
发明内容
本发明的目的在于提供一种生产芝麻油的加工方法,该方法生产出的芝麻油风味浓郁、柔和,且营养丰富,可以连续化生产。
本发明一种生产芝麻油的加工方法,包括以下步骤:
a晾晒:取去壳的芝麻仁,对其进行晾晒,控制含水率3%—5%,得干燥芝麻仁;
b碾磨:将步骤a的干燥芝麻仁通过碾碎机进行碾碎,得芝麻酱;
c保温:将步骤b的芝麻酱密封于容器中,在55±5℃的条件下保温2小时;
d制饼:将步骤c的保温芝麻酱做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮0.5—1小时;
f压榨:将步骤e蒸煮后的芝麻饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀36—48小时后进行过滤,即得到成品油。
所述的步骤g中毛油过滤是将毛油均匀经过板框过滤机过滤,以除去杂质。
上述技术方案有如下优点:
本发明是以纯天然芝麻米为原料制备,不添加任何有害成分,属于绿色健康食品;制备的产品不饱和脂肪酸含量高,并保留麦胚酚、磷脂、维生素E、胆碱等有益成分;制备过程简单,生产成本低,特别是工艺条件温和,可以充分保留芝麻米的原始营养成分;出油率高,得到的芝麻油不含有有机溶剂,芝麻油中的各种有效成分不受破坏,使用价值较高;除含有丰富的不饱和脂肪酸,如亚麻酸、亚油酸外,还含有植物甾醇、氨基酸、维生素、矿物质等多种生物活性物质,尤其是锌、镁、钙、磷含量极高。
具体实施方式
下面结合具体实施例对本发明一种生产芝麻油的加工方法做进一步说明。
实施例1:
a晾晒:取去壳的芝麻仁1000公斤,对其进行晾晒,控制含水率3%-5%,得干燥芝麻仁;
b碾磨:将步骤a的干燥芝麻仁通过碾碎机进行碾碎,得芝麻酱;
c保温:将步骤b的芝麻酱密封于容器中,在50℃的条件下保温2小时;
d制饼:将步骤c的保温芝麻酱做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮0.5小时;
f压榨:将步骤e蒸煮后的芝麻饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀36小时后进行过滤,制得成品油460公斤。
实施例2:
a晾晒:取去壳的芝麻仁1000公斤,对其进行晾晒,控制含水率3%-5%,得干燥芝麻仁;
b碾磨:将步骤a的干燥芝麻仁通过碾碎机进行碾碎,得芝麻酱;
c保温:将步骤b的芝麻酱密封于容器中,在60℃的条件下保温2小时;
d制饼:将步骤c的保温芝麻酱做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮1小时;
f压榨:将步骤e蒸煮后的芝麻饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀48小时后进行过滤,制得成品油480公斤。
本发明所制备的芝麻油,其单不饱和脂肪酸较高,长期使用有利于身体健康;此外,还含有植物甾醇、氨基酸、维生素、矿物质等多种生物活性物质,尤其是锌、镁、钙、磷含量极高,具有良好的延迟人体细胞衰老、保持青春的功能;经常食用芝麻油,可以防止皮肤皱裂老化,保护血管壁,防止血栓形成,有助于预防动脉硬化和冠心病;同时,芝麻油中的胆碱,还可改善人脑的记忆力,延缓脑功能衰退。

1.一种生产芝麻油的加工方法,包括以下步骤:
a晾晒:取去壳的芝麻仁,对其进行晾晒,控制含水率3%—5%,得干燥芝麻仁;
b碾磨:将步骤a的干燥芝麻仁通过碾碎机进行碾碎,得芝麻酱;
c保温:将步骤b的芝麻酱密封于容器中,在55±5℃的条件下保温2小时;
d制饼:将步骤c的保温芝麻酱做成饼;
e蒸煮:将步骤d的饼放置在蒸笼内,通过水蒸气蒸煮0.5—1小时;
f压榨:将步骤e蒸煮后的芝麻饼进行压榨即得毛油;
g过滤:将步骤f制得的毛油沉淀36—48小时后进行过滤,即得到成品油。
2.根据权利要求1所述的一种生产芝麻油的加工方法,其特征在于:所述的步骤g中毛油过滤是将毛油均匀经过板框过滤机过滤,以除去杂质。
