Abstract
本发明提供一种有机瓜蒌籽油及其生产工艺,其特征在于,依次按以下步骤:A、用剥壳机剥壳,获取有机瓜蒌籽仁;B、对有机瓜蒌籽仁进行晾晒,控制含水率4%;C、将晒干的有机瓜蒌籽仁用液压机加压出毛油。D、毛油沉淀36~48h后进行过滤,得到成品油。本发明瓜蒌籽食用油气味浓香、风味独特,可广泛适用于烹制各种食品和菜肴,具有较高营养价值和保健养生作用,确保了高抗氧化活性成分,特别适于在小批量特种油脂生产技术领域推广。

本发明涉及一种生产有机瓜蒌籽油的方法,所属技术领域:二、生物与新医药技术,(七)现代农业技术,4、农产品精深加工与现代储运:农林产品及特种资源增值加工。
背景技术
栝楼(Trichosanthes kirilowii Maxim.)为葫芦科栝楼属,多年生草质藤本药用植物,主要分布在安徽、山东、河南、浙江、四川、云南等地。栝楼(Trichosanthes kirilowii Maxim.)或双边栝楼(Trichosanthes rosthornii Harms)的干燥成熟种子称为瓜蒌籽。瓜蒌籽中油脂含量为26%~49%,不饱和脂肪酸含量达66%~93%,以油酸、亚油酸为主,且含有以瓜蒌酸为代表的多种分子构型的共轭亚麻酸,含量超过不饱和脂肪酸总量50%。但是,以瓜蒌籽为原料制备一种食用油生产加工方法还没有研究。
发明内容
本发明的目的在于提供一种简便、营养价值和保健养生、工艺合理的有机瓜蒌籽茶籽食用油生产方法。
本发明的技术方案是这样实现的,包括如下步骤:
A、用剥壳机剥壳,获取有机瓜蒌籽仁;
B、对有机瓜蒌籽仁进行晾晒,控制含水率3%—5%;
C、将晒干的有机瓜蒌籽仁用液压机加压出毛油;
将有机瓜蒌籽仁做成饼放入液压机,每榨投饼20-25块,每块约4-6kg,均匀地加压液压机低压、使压力压到110-120MPa时,将低压调到高压,均匀加压到280-300MPa时为止,压榨时,不能太快,以免饼渣渗出;
D、毛油沉淀36~48h后进行过滤,得到成品油;
将毛油沉淀36~48h后,将油均匀经过板框过滤机过滤除去杂质,得到成品油。
本发明的优点是:
本发明生产工艺取油的产品颜色浅、有瓜蒌籽的特殊气味以及保留了营养成分;传统工艺中的烘干、蒸炒以及脱色工艺需要加活性炭或者活性白土,烘干取油使得苯并芘含量增加需要加活性炭吸附,蒸炒取油的的颜色较深需要加活性白土脱色,虽然能够去除不利因素,但是操作复杂、添加化学物质会去除营养成分以及瓜蒌籽茶的特殊气味。
本发明提供一种简便、营养价值和保健养生、工艺合理的有机瓜蒌籽油生产方法,能够为小批量特种油脂生产提供技术支持,适于在食用油生产技术领域推广。
具体实施方式
有机瓜蒌籽油生产工艺:
A、用剥壳机剥壳,获取有机瓜蒌籽仁;
B、对有机瓜蒌籽仁进行晾晒,控制含水率4%;
C、将晒干的有机瓜蒌籽仁用液压机加压出毛油;
将有机瓜蒌籽仁做成饼放入液压机,每榨投饼23块,每块约5kg,均匀地加压液压机低压、使压力 到115MPa时,将低压调到高压,均匀加压到285MPa时为止,压榨时,不能太快,以免饼渣渗出;
D、毛油沉淀36h后进行过滤,得到成品油;
将毛油沉淀36h后,将油均匀经过板框过滤机过滤除去杂质,得到成品油。
本发明可用于特种油脂生产,适用于营养价值和保健养生食用油生产,做到无污染、低能耗。

1. 一种生产有机瓜蒌籽油的加工方法,其特征在于包括如下步骤:
A、用剥壳机剥壳,获取有机瓜蒌籽仁;
B、对有机瓜蒌籽仁进行晾晒,控制含水率3%—5%;
C、将晒干的有机瓜蒌籽仁用液压机加压出毛油;
将有机瓜蒌籽仁做成饼放入液压机,每榨投饼20-25块,每块约4-6kg,均匀地加压液压机低压、使压力到110-120MPa时,将低压调到高压,均匀加压到280-300MPa时为止,压榨时,不能太快,以免饼渣渗出;
D、毛油沉淀36~48h后进行过滤,得到成品油;
将毛油沉淀36~48h后,将油均匀经过板框过滤机过滤除去杂质,得到成品油。
