Abstract
"PROCESSO PARA A MANUFATURA DE UM PRODUTO LáCTEO CULTIVADO, COMPOSIçãO LáCTEA CULTIVADA, PROCESSO PARA A MANUFATURA DE UM PRODUTO LáCTEO CULTIVADO AERADO, E, COMPOSIçãO LáCTEA CULTIVADA AERADA". A presente invenção refere-se aos produtos lácteos cultivados e mais particularmente às composições de queijo cremoso cultivadas que são preparadas sem uma etapa de separação de soro de leite e que possuem níveis reduzidos de materiais lácteos cultivados. A presente invenção também se refere aos métodos de preparar tais produtos de queijo cremoso ou lácteos cultivados. Os produtos de queijo cremoso ou lácteos cultivados contêm uma quantidade considerável de material lácteo não-cultivado (em geral maior do que cerca de 60 porcento, e preferivelmente cerca de 70 a cerca de 80 porcento, de proteína láctea total).
