Abstract
Patente de Invenção: "PRODUTOS ALIMENTìCIOS QUE TêM TEOR MELHORADO DE POLIFENOL DE CACAU E PROCESSOS PARA A PRODUçãO DO MESMO". A invenção fornece produtos alimentícios, inclusive produtos de confeitaria e chocolates, tendo concentrações conservadas de polifenóis e em particular polifenóis de cacau. O processo desta invenção evita as perdas significativas e prejudiciais de polifenol que ocorrem durante a fabricação convencional por controle da manipulação de ingredientes no processo em batelada para fornecer um produto que contém uma quantidade significativa dos polifenóis de cacau presentes nas matérias primas usadas para formular o produto acabado. Adicionalmente, as etapas de moagem / refinação e formação de conchas podem também ser controladas e modificadas para fornecer produtos de confeitaria que tenham concentrações conservadas de polifenóis de cacau em relação à concentração de polifenol de cacau dos ingredientes de partida. O polifenol de cacau que contém ingrediente pode ser um extrato de cacau, solução de chocolate, sólidos de cacau parcialmente desengordurados e/ou polifenol sintético.
