Abstract
Se proporciona una cobertura de recubrimiento duro, y una confitura de recubrimiento duro que comprende un núcleo comestible cubierto con la misma. La cobertura de recubrimiento duro comprende múltiples capas de jarabe de azúcar, sólo algunas de las cuales comprenden además uno o más ésteres de sacarosa. En algunas modalidades, el dióxido de titanio puede excluirse de las capas de jarabe de azúcar/éster de sacarosa. En esta y otras modalidades, las coberturas de recubrimiento duro muestran uno o más valores de L*, a* y b* dentro de 5% del valor correspondiente de una cobertura superior de colorante aplicada sobre una pre-cobertura que comprende dióxido de titanio. De esta manera se proporcionan ahorros en costo de materia prima, mientras que aún proporciona una confitura que tiene propiedades mejoradas.
