Abstract
Una composición alimenticia en forma de emulsión de aceite en agua, que comprende: 65 a 85% en peso de aceite vegetal, agua, proteína vegetal en una cantidad de 0,3 a 5% en peso, en función del peso de la composición, donde más del 60% en peso de dicha proteína vegetal, en función del peso de la proteína vegetal, es albúmina vegetal, donde el pH de la composición está entre 2 y 5.
