Abstract

Un procedimiento para preparar un concentrado salado con forma que tiene una actividad de agua inferior a 0,8 y un contenido de grasa total del 10 al 35% en peso, dicho procedimiento comprende: a) mezclar los siguientes ingredientes para preparar una mezcla en polvo que contiene grasa: sal comestible seleccionada entre cloruro de sodio, cloruro de potasio y combinaciones de ellos, uno o más ingredientes particulados seleccionados entre azúcares, glutamato, harina, almidón, trozos vegetales y combinaciones de ellos, y grasa líquida o fundida, y dicha grasa comprende al menos el 30% en peso de aceite vegetal; b) mezclar la mezcla en polvo que contiene grasa con un líquido polar comestible para producir una pasta; c) opcionalmente mezclar la pasta con componentes comestibles seleccionados entre grasa, condimento y combinaciones de ellos; y d) formar la pasta en artículos con forma por medio de extrusión. La presente también se refiere a un concentrado salado con forma extruído que conserva su forma a temperaturas elevadas.
