Abstract
La presente se refiere a un proceso para la preparación de un concentrado de sabor con forma que tiene una actividad de agua de menos de 0,8 un contenido total de grasa del 10 - 35% en peso, donde dicho proceso comprende: a) combinar los siguientes ingredientes para preparar una mezcla en polvo: 100 partes en peso de sal comestible seleccionada de cloruro de sodio, cloruro de potasio y combinaciones de los anteriores, 2 - 150 partes en peso de uno o más ingredientes en partículas seleccionados de b) mezclar 5 - 150 partes en peso de un componente graso a la mezcla en polvo, donde el componente graso tiene un N₂₀ de al menos 20% y un N₃₅ de menos del 30%, donde tras incorporar con la mezcla en polvo el componente graso tiene un N₂₀ de al menos 10%, para formar una pasta, c) extrudar la pasta en el concentrado de sabor con forma.
