Abstract

La presente invención se refiere a un proceso para preparar biomasa de cacao con una fase grasa modificada mediante el mezclado de biomasa de cacao que tiene una fase grasa 1 con una grasa vegetal que tiene fase grasa 2, por lo que forman la fase grasa 3 en la biomasa de cacao, seguido de la separación de la fase grasa 3 de la biomasa de cacao a una proporción de grasa deseada en la biomasa de cacao. La presente invención también se refiere a composiciones grasas que comprende dicha biomasa de cacao con una fase grasa modificada y a productos comestibles que comprenden dicha biomasa de cacao con un perfil graso modificado y a usos del proceso.
