Abstract
Se provee un concentrado alimenticio sustancialmente libre de agua con grandes cantidades de almidón no gelatinizado, sin que sea necesario usar sorbitol, de modo tal que después de la dilución se obtenga una viscosidad suficiente en el producto listo para el consumo. Reivindicación 1: Un concentrado alimenticio que comprende: a) menos del 20% en peso de agua, en peso del concentrado alimenticio total; b) entre 3 y 70 % en peso de sal, en peso del concentrado alimenticio total; c) una cantidad efectiva de un realzador del sabor, seleccionado entre: glutamato, 5-ribonucleótidos, sacarosa, glucosa, fructosa, acido láctico, acido cítrico y sus mezclas; d) entre 10 y 75% en peso, en peso del concentrado alimenticio total de un almidón no gelatinizado, recocido, de expansión tardía caracterizado por una Tₒₙₛₑₜ de ref. de al menos 70ºC.
