Abstract
Y una planta de procesamiento de lácteos para su implementación. Reivindicación 1: Método para elaborar leche o productos lácteos, caracterizado porque comprende los pasos siguientes: a) proveer leche cruda, b) someter la leche cruda a tratamiento en una bactofugadora (c3, d3) y de ese modo separar físicamente los microorganismos de la leche cruda, c) separar la leche cruda del paso b) en una fracción de crema y una fracción de leche descremada (c4, d4), d) someter la fracción de leche descremada a microfiltración (c5, d5) que está adaptada para eliminar los microorganismos y de ese modo obtener una fracción de leche descremada parcialmente esterilizada, e) someter la fracción de leche descremada parcialmente esterilizada a filtración por membrana (c6, d6) que está adaptada para estandarizar dicha fracción de leche descremada parcialmente esterilizada, f) opcionalmente, reciclar el producto del paso e) nuevamente en el paso a), b), c), d) o e), g) transportar el producto del paso e) a un tanque de equilibrio para leche procesada (c8, d8), en donde dicho tanque de equilibrio para leche procesada está adaptado para equilibrar o igualar cualesquiera cambios de presión o de flujo que pueden surgir durante los pasos de procesamiento precedentes, y h) someter el producto obtenido por los pasos precedentes a pasteurización (c10, c10) con el fin de obtener leche o productos lácteos pasteurizados.
