Abstract

La invención se relaciona con un método para fabricar un producto lácteo fermentado filtrado que comprende los siguientes pasos sucesivos: (a) proporcionar un producto lácteo, (b) agregar una lactasa y un cultivo de bacterias que comprende al menos una cepa de bacterias de ácido láctico termofílico, con la condición de que no comprenda ninguna cepa de bacterias termófilas de ácido láctico con la condición de que no comprenda ninguna cepa de bacterias mesofilas de ácido láctico, y fermentar el producto lácteo para obtener un producto lácteo fermentado y (c) separar un suero liquido del producto lácteo fermentado para obtener un producto lácteo fermentado filtrado.
