Abstract

Un método para producir pasta de tomate que tienen un mayor valor nutricional que es, por ejemplo, el resultado de la presencia de una cantidad significativa de acido gamma-aminobutírico. Mas particularmente, el método de la presente se refiere a laproduccion de pastas de tomate con tomate procesados deshidratados, y dichos tomates deshidratados se obtienen ya sea cosechando tomates después de la maduracion que deshidrataron en la planta o cosechando tomates que posteriormente se deshidratansecando los tomates intactos, dichos tomates tienen una cutícula que es permeable al agua. Los inventores han observado que a fin de producir una pasta de tomate con alto contenido de GABA deseado y un sabor optimo, los tomates procesados debendeshidratarse a un valor Brix que oscila entre 5 y 10.
