Abstract

MÉTODO DE PRODUÇÃO DE MASSA DE TOMATE, MASSA DE TOMATE, MÉTODO DE ELABORAÇÃO DE PRODUTOS DE TOMATES PROCESSADOS COMESTÍVEIS, PRODUTO DE TOMATE PROCESSADO COMESTÍVEL E MÉTODO DE AUMENTO DO TEOR DE ÁCIDO GAMA-AMINOBUTÍRICO DE PRODUTOS ALIMENTÍCIOS OU BEBIDAS. A presente invenção refere-se a um método de produção de massas de tomate que possuem valor alimentício aprimorado, resultante, por exemplo, da presença de uma quantidade significativa de ácido gama-aminobutírico. Mais especificamente, o método do presente refere-se à produção de massas de tomate a partir de tomates de processamento desidratados, em que os mencionados tomates desidratados são obtidos por meio da colheita de tomates maduros demais que foram desidratados ainda na plantação ou por meio da colheita de tomates que são desidratados posteriormente por meio de secagem dos tomates intactos, em que os mencionados tomates possuem uma cutícula que é permeável à água. Os inventores observaram que, a fim de produzir uma massa de tomate com o alto teor de GABA desejado e sabor ideal, os tomates de processamento deverão ser desidratados até um valor Brix na faixa de 5 a 10.
