Abstract
La presente propone un procedimiento para producir una masa congelada la cual puede ser transferida directamente del congelador al horno sin una etapa de levado previo o deshelado. El procedimienro comprende mezclar los ingredientes de la masa, formar sitios de nucleos de gas en la masa, amasar la masa sometiéndola a ciclos de presiones diferenciales y congelar la masa. El producto congelado puede ser transferido directamente desde el congelador a un horno para su horneado.
