Abstract
La presente proporciona productos de masa de congelador a horno, así como también métodos para la preparacion de los productos de masa. Específicamente,los productos de masa de la presente incluyen un sistema leudante químico que comprende una plural idad de ácidos leudantes químicos que tienen diferentesrangos de temperatura a los cuales son activos como leudantes químicos. Dicho sistema leudante químico proporciona la elevacion de etapas, es decir, laelevacion que se produce sobre un amplio ran go de temperatura, y en consecuencia, durante una porcion sustancial del ciclo de coccion, de los productos de masade la presente cuando son cocinados. Proporcionando los productos de masa congelados con dicho sistema leudante, se evita la necesidad de un paso de pruebaprevio antes del congelamiento, un paso de descongelamiento o un paso de prueba intermedio antes de la coccion, y aun, el producto de masa es capaz deexpansion sustancial con la coccion, produciendo así un producto de masa cocido con excelentes propiedades visuales y organolépticas.
