Abstract
Las emulsiones alimenticias congeladas, con bajo contenido de grasa comprenden una fase acuosa continua y una fase dispersa, la cual comprende partículasde grasa, partículas de gel y moléculas saborizantes liposolubles; sustancialmente la totalidad de las partículas de grasa están situadas dentro de laspartículas de gel y por lo menos el 35% de las moléculas saborizantes se situan en una pluralidad de las partículas de gel. La velocidad de liberacion de lasmoléculas saborizantes desde la emulsion congelada se retarda, impartiendo de esta manera el sabor de una emulsion con un contenido total de grasa. También serevela un producto alimenticio combinado y un procedimiento destinado a la preparacion de la emulsion alimenticia congelada.
