Abstract

Una emulsion comestible de bajo contenido graso, no congelada que comprende una fase acuosa continua y una fase dispersa que comprende partículas de grasaestán ubicadas dentro de las partículas de gel y moléculas de sabor solubles en grasa;sustancia lmente todas las partículas de grasa están ubicadas dentro delas partículas de gel y al menos 35% en peso de la moléculas de sabor están ubicadas en una pluralidad de las partículas de gel. La velocidad de liberacionde las moléculas desabor de l a emulsion está retardada, con lo cual se imparten el sabor y sensacion en el gusto de una emulsion completamente grasa.La figura 1 es un gráfico de la intensidad de sabor en conteo por áreas (eje y) en funcion del tiempo (eje x,en segundos) para cuatro aderezos que contienenetil hexanoato, donde dos de los aderezos contienen partículas de gel de alginato de calcio. La figura 2 es un gráfico de la intensidad del sabor enconteo por áreas (eje y) en funcion del tiempo(eje x, en se gundos ) para cuatro aderezos que contienen nonanona, donde dos de los aderezos contienenpartículas de gel de alginato de calcio.
