Abstract

La invención se refiere a un método para preparar un mosto a partir de cereales, que comprende las etapas de: proporcionar una molienda que comprende cereales no malteados; preparar una mezcla al poner en contacto la molienda con agua y con una alfa-amilasa, una proteasa y una enzima auxiliar de filtración, para producir una pasta después de la incubación; incubar la mezcla a 45-55 °C durante un período de 10-30 minutos, a 60-70 °C durante un período de 20-40 minutos y a 80-90 °C durante un período de 5-15 minutos; filtrar la pasta para obtener un mosto líquido; y recolectar el mosto.
