Abstract
La invención proporciona un método para tratar el jugo de raíz o tubérculo, que comprende a) un pretratamiento del jugo de raíz o tubérculo para remover los lípidos de raíz o tubérculo a un nivel por debajo de 28 g/kg en peso seco; b) el enfriamiento del jugo de raíz o tubérculo a una temperatura de -0.3°C a -16°C para formar cristales de hielo; y c) la separación de los cristales de hielo del jugo de raíz o tubérculo para obtener, como un primer producto de jugo de raíz o tubérculo, un jugo de raíz o tubérculo concentrado. Además, la invención proporciona los métodos para obtener productos de jugo de raíz o tubérculo agotados en proteína, así como productos que comprenden aminoácidos libres de raíz o tubérculo, y los usos de los mismos. Las reivindicaciones independientes de producto por proceso están dirigidas al contenido de carbonilo en la proteína soluble o la cantidad de aminoácido libre basada en la materia seca.
