Abstract

La presente se refiere a una bacteria de la especie Lactobacillus fermentum donde la bacteria se caracteriza porque aumenta el pH de un producto fermentado de la leche que comprende el Lactobacillus fermentum durante el almacenamiento después de la fermentación en comparación con un producto fermentado de la leche con el mismo cultivo iniciador que no contiene el Lactobacillus fermentum. En una realización relacionada de la presente, se brinda una bacteria de la especie Lactobacillus fermentum caracterizada porque un producto fermentado de la leche que comprende el Lactobacillus fermentum mantiene un pH inferior a 4,0 cuando se lo almacena por al menos 14 días a 25ºC, donde el producto fermentado de la leche se obtiene mediante un método que comprende la incubación de una leche con el Lactobacillus fermentum en una concentración de, al menos 10⁷ CFU/g y con un cultivo iniciador, que fermenta hasta que se alcanza un pH 4,6, agitando el producto fermentado y enfriando. También se refiere a las composiciones que comprenden las bacterias, métodos para producir productos fermentados de la leche que usan las bacterias y los productos así obtenidos.
