Claims (35)
1. Подслащенный молочный продукт, включающий
молочный материал,
по меньшей мере один стевиолгликозид и
фермент лактазу.
2. Продукт по п.1, в котором по меньшей мере один стевиолгликозид включает по меньшей мере одно соединение, выбранное из группы, включающей ребаудиозид А, ребаудиозид В, ребаудиозид С, ребаудиозид D, ребаудиозид М и стевиозид.
3. Продукт по п. 1 или 2, в котором по меньшей мере один стевиолгликозид представляет собой композицию стевиолгликозидов, включающую ребаудиозид В, по меньшей мере один из ребаудиозида А, ребаудиозида D и ребаудиозида М и необязательно стевиозид.
4. Продукт по любому из предшествующих пунктов, дополнительно включающий по меньшей мере одну добавку, выбранную из группы, включающей
полисахарид со звеньями фруктозы,
соль и
их смеси или ассоциации.
5. Продукт по п.4, в котором соль включает катион натрия или калия и хлорид-анион.
6. Продукт по п. 4 или 5, в котором соль представляет собой композицию морской соли.
7. Продукт по п.4, в котором полисахарид со звеньями фруктозы представляет собой инулин или фруктоолигосахарид (ФОС).
8. Продукт по п.7, в котором полисахарид со звеньями фруктозы представляет собой соединение фруктоолигосахарид (ФОС), имеющий среднее число звеньев фруктозы от 3 до 5, предпочтительно, по существу свободный от свободной фруктозы.
9. Продукт по любому из предшествующих пунктов, включающий источник жира.
10. Продукт по п.9, имеющий содержание жира от 0,01 мас.% до 8,00 мас.%.
11. Продукт по любому из предшествующих пунктов, включающий источник белка.
12. Продукт по п.11, имеющий содержание белка от 0,5 мас.% до 12,0 мас.%.
13. Продукт по любому из предшествующих пунктов, дополнительно включающий фрукт и/или по меньшей мере один ароматизатор.
14. Продукт по любому из предшествующих пунктов, в котором молочный материал включает животное молоко, предпочтительно коровье молоко.
15. Продукт по любому из предшествующих пунктов, заключенный в контейнер, предпочтительно герметично закрытый контейнер.
16. Продукт по любому из предшествующих пунктов, включающий ферментированную молочную композицию и необязательно промежуточную композицию.
17. Продукт по п.16, в котором ферментированная молочная композиция представляет собой фильтрованную ферментированную молочную композицию.
18. Способ получения продукта по любому из предшествующих пунктов, включающий стадии:
а) получения молочной композиции, включающей молочный материал и фермент лактазу, и
b) добавления промежуточной композиции, включающей по меньшей мере один стевиолгликозид.
19. Способ по п.18, в котором молочный материал включает лактозу.
20. Способ по п. 18 или 19, в котором молочная композиция представляет собой ферментированную молочную композицию.
21. Способ по п.20, в котором стадия а) включает следующие стадии:
а1) обеспечение молочной композиции, включающей лактозу,
а2) добавление фермента и по меньшей мере частичный гидролиз лактозы,
а3) инокуляция молочнокислыми бактериями и
а4) ферментация молочной композиции.
22. Способ по п.21, в котором ферментированная молочная композиция представляет собой фильтрованную ферментированную молочную композицию, причем стадия а) дополнительно включает следующую последовательную стадию:
а5) сепарация для получения фильтрованной ферментированной молочной композиции и побочного продукта кислой сыворотки.
