Abstract

La invención se relaciona a un proceso para preparar un extracto de chí­charos que comprende fibras, el proceso que comprende las siguientes etapas: (a) llevar los chí­charos pelados en contacto con una solución acuosa con el fin de formar una composición acuosa que comprende chí­charos: (b) dejar los chí­charos hidratarse en la composición acuosa por al menos 30 minutos y a lo más 15 horas; (c) moler los chí­charos con el fin de obtener como resultado chí­charos molidos; y (d) fraccionar los chí­charos molidos con el fin de obtener por lo menos un extracto de chí­charos que comprende fibras. La invención también se relaciona a un extracto de chí­charos que puede ser obtenido de acuerdo al proceso de la invención. La invención también se relaciona a una composición comestible que comprende el extracto de chí­charos de acuerdo a la invención.
