Abstract

La presente invención se dirige a un proceso para preparar un producto alimenticio que tiene una envoltura, en donde el proceso comprende el paso de aplicar una pasta de envoltura que comprende alginato y una sal de calcio moderadamente soluble mediante co-extrusión al exterior de un material que será envuelto para formar un producto co-extruido, y contactar el producto co-extruido con una solución que comprende iones de calcio, para originar de esta forma que el alginato se gelatinice.
