1. Способ получения жира из печени рыб, включающий измельчение печени рыб, смешивание ее с водой и протеолитическим ферментным препаратом, термическую обработку, отделение жира, отличающийся тем, что перед измельчением печень обрабатывают 0,3% раствором антиокислителя и замораживают, затем размораживают до температуры внутри печени минус 1°C - минус 5°C, измельчают до образования частиц размерами 2-5 мм, после измельчения температуру измельченной печени доводят до 45-50°C, при которой проводят ферментолиз, при этом в качестве ферментного препарата используют фермент растительного происхождения Corolase L10 в количестве от 0,05-0,1% от массы сырья, затем проводят отделение жира путем центрифугирования и сепарирования, с последующей адсорбционной очисткой жира при температуре от 20°C до 50°C под вакуумом 60-80 кПа, при этом используют высокоактивные отбеливающие земли, в количестве от 0,15% до 3% от массы жира, по окончании проводят фильтрацию с отделением жира. !2.
