Способ производства хлеба из смеси ржаной и пшеничной муки, предусматривающий приготовление теста путем смешивания ржано-пшеничной муки, дрожжей, воды, соли, подкислителя, ржаного ферментированного солода и сахаросодержащей пасты из картофеля, выбраживание теста, деление его на куски, расстойку и выпечку, отличающийся тем, что сахаросодержащую пасту из картофеля сушат воздухом с температурой 60°С в течение 8-12 ч до конечной влажности 12-13%, измельчают до получения порошка дисперсностью не более 200 мкм, смешивают с ржано-пшеничной мукой, а в качестве подкислителя используют растворенную в воде лимонную кислоту.
