Способ производства плодово-фруктового пюре, характеризующийся тем, что тыквы, яблоки и абрикосы моют, инспектируют, очищают, измельчают и смешивают в пропорции 50:25:25, нагревают под давлением 0,15 МПа до температуры 110,8°С, после чего полученную плодово-фруктовую смесь концентрируют путем двухстадийного выпаривания: на первой стадии за счет сброса давления смесь распыливают при давлении 3…4 кПа, а на второй стадии выпаривают стекающую вниз пленку пюре на вертикальной стенке вакуум-камеры при температуре термостатирования 35…40°С, при этом, за счет испарения образующихся паров, содержание сухих веществ в плодово-фруктовом пюре доводят до 28…30%.
