Способ производства грибной солянки, характеризующийся тем, что капусту, помидоры, морковь, грибы (опята), репчатый лук, болгарский перец, баклажаны, корни петрушки, красный стручковый перец моют, инспектируют, очищают, измельчают до размера частиц 0,4-0,5 мм и смешивают в пропорции 25:20:15:12:10:8:6,5:3,2:0,3, затем полученную овощную смесь нагревают до температуры 76°С и выдерживают в течение 35-45 мин, после чего овощную смесь концентрируют путем выпаривания: овощную смесь выпаривают в вакуум-камере при давлении 3…5 кПа при температуре термостатирования 35°C, при этом за счет испарения образующихся паров содержание сухих веществ в овощном пюре доводят до 64%, далее в уваренное овощное пюре вводят 90%-ный сахарный сироп в количестве 3,7% к первоначальной массе овощной смеси, 30%-ный раствор хлорида натрия в количестве 4,2% к первоначальной массе овощной смеси, растительное (подсолнечное) масло в количестве 6,5% к первоначальной массе овощной смеси, 6%-ный водный раствор этановой (уксусной) кислоты в количестве 0,8% к первоначальной массе овощной смеси, далее приготовленную грибную солянку расфасовывают в тару, укупоривают и стерилизуют.
