Abstract
1,202,143. Snack foods. H. CROMMELIJNCK. 23 Jan., 1968 [27 Jan., 1967; 16 Jan., 1968], No. 3404/68. Heading A2B. Dough which has been deep frozen to below -12‹C. is cut into fine slices which are dipped and cooked before their complete thawing in molten fat or oil, preferably at at least 220‹C., and preferably with forced circulation to prevent local overheating, and afterwards dried. The dough preferably contains a maximum of 10% fat and 12% liquid. A suitable dough consists of flour, sugar, eggs, salt and butter. If desired, some of the sugar and eggs may be replaced by cheese. Pepper and other spices may be added. A flavouring such as almond may be added.
