Abstract
1,163,949. Flavouring and preserving food. W. R. GRACE & CO. 11 Nov., 1966 [8 Dec., 1965], No. 50718/66. Headings A2B, A2D and A2E. [Also in Divisions C4 and C5] Meat, synthetic meat, fish, shrimps clams and oysters are treated with a water-inoil emulsion containing a seasoning or flavouring agent before or during cooking. The emulsion contains (1) 6-98 parts by weight fat (2) 2-74 parts by weight water and (3) 0.10-22 parts by weight of an emulsifier composition containing (a) 1-12 parts by weight of an edible non ionic emulsifying agent having a hydrophiliclipophilic balance of 3-6, comprising 0-75 per cent by weight hydrophilic emulsifier and 100-25 per cent by weight lipophilic emulsifier, the lipophilic emulsifier having an iodine value greater than 8 and (b) 0.6 to 10 parts by weight edible wax. The seasoning composition may be in the solid state in which case it is melted on to the food which may be in the frozen state, or in the form of an aerosol composition such that it can be sprayed on the food. The seasoning composition may contain preservatives such as benzonic acid, sodium benzoate or sorbic acid. The seasoning composition may contain beeswax, candelilla wax, carnauba wax, salt, sugar, dehydrated onion, dehydrated parsley, pepper, nutmeg, paprika, protein autolysates, apple juice, corn oil, cotton seed oil, safflower seed oil, soybean oil, chicken fat, beef fat, pork fat monoglycerides and colouring agents.
