Abstract
In purifying sugar-containing juice by adding lime and carbon dioxide simultaneously to the juice so as to bring it, with sudden transition, to several distinct pH stages, a final pH value of 10-10.4 is attained in the last stage, thereafter lime is added in an amount corresponding to the content of invert sugar in the juice, carbon dioxide is then added until a pH value of about 11 is attained, the colloid-containing sludge obtained is separated, a final saturation of the juice is effected and the carbonate sludge so formed is separated. The colour of the purified juice is further improved if a further small quantity of lime be added to the juice before or during the final saturation. Specification 758,511 is referred to.
