Abstract

"PROCESSO PARA A FABRICAçãO DE UM PRODUTO DE ALIMENTO CONGELADO COMPREENDENDO PEPTìDEOS ANTICONGELAMENTO, PRODUTO DE ALIMENTO PARTICULADO DE FLUXO LIVRE, PROCESSO PARA FORNECER O MESMO, E, USO DE UM PROCESSO COMPREENDENDO CONGELAMENTO RáPIDO DE UM PRODUTO DE ALIMENTO" Um produto de alimento congelado composto de AFPs, o referido produto tendo um tamanho médio de cristal de gelo de 0,01 a 20 micrometros, onde o referido tamanho de cristal é mantido entre 0,01 e 20 micrometros quando estocado por três semanas a -10 ° C. Adicionalmente é descrito um processo para a produção de um produto de alimento congelado compreendendo AFPs, onde o processo compreende uma ou mais das seguintes etapas: (i) uma etapa de (pré) congelamento a qual é uma etapa de congelamento dominada por nucleação; (ii) uma etapa de (Pós-) compactação utilizando-se um extrusor de parafusos ou um compactador.
