Abstract
Patente de Invenção: <B>"COMPOSIçãO ALIMENTìCIA à BASE DE CREME E PROCESSO PARA A FABRICAçãO DA MESMA"<D>. Processo para a preparação de um creme, em que é preparada com agitação uma mistura que contém um derivado de leite, 8-30% de açúcares, 10-60% de produto laticínio fermentado, 0-25% de creme ácido ou de creme de leiteria que contém 25-45% de substância gordurosa, 0-35% de agente de texturização, 0-20% de produto aromático e 0-05% de sal, é tratada a quente, a sua temperatura é ajustada até 15-40°C e é adicionada substância gordurosa à mesma com agitação, de modo a obter um creme homogêneo. O creme assim obtido pode ser usado na fabricação de uma composição alimentícia por depósito do mesmo sobre pelo menos uma camada, de preferência entre duas camadas, de biscoito.
