Abstract

Un procedimiento para la preparacion de una crema, en el cual es preparada con agitacion una mezcla que contiene un derivado de la leche, 8-30% deazucares, 10-60% de producto lácteo fermentado, 0-25% de crema ácida o de crema de leche que contiene2 5-45% de sustancia grasa, 0-35% de agente texturizante,0-20% de producto aromatico y 0-0,5% de sal, es tratada con calor, se ajusta su temperatura a 15-40sC y se agrega sustancia grasa fundida con agitacion, paraobtener una crema homogénea. Lacrema así obtenida puede ser utilizada en la preparacion de una composicion alimenticia depositando la crema en por lo menosuna capa preferentemente entre dos capas de bizcocho.
