Abstract
processo para a produção de macarrão frito. macarrão frito de excelente qualidade que é de aproximadamente 1 a 7 cm de comprimento, pode ser produzido de forma eficiente por um processo para a produção de macarrão frito incluindo: uma etapa de preparação de macarrão cru; uma etapa de gelatinização do macarrão cru; uma etapa de corte do macarrão cru gelatinizado em macarrão de 1 a 7 cm; e uma etapa de fritura do macarrão cortado por permitir que o mesmo flutue naturalmente no óleo de fritura.
