Abstract
Un método de fermentación, en particular de vinificación del tipo en el cual el mosto, que proviene de la prensa, directamente o después de la permanencia en un tanque de reposo temporario, está sujeto a clarificación, en particular por filtración tangencial, a fin de determinar los valores de turbidez predeterminados para el mosto filtrado. El método se caracteriza porque el mosto de la fase de clarificación viene con un agregado de una cantidad del mismo mosto no clarificado, es decir, de antes de la fase de clarificación, hasta que se llega a un valor de turbidez preestablecida según la calidad del vino que se desea obtener. Este método también se puede usar ventajosamente para regular la turbidez del vino durante la maduración y de la cerveza. La presente invención también se refiere a un aparato de fermentación.
