Abstract
Proceso para preparar una masa de cacao con una fase grasa modificada mediante el mezclado de una masa de cacao que tiene una fase grasa 1 con una grasa vegetal que tiene una fase grasa 2, formando de este modo una fase grasa 3 en la biomasa de cacao, seguido de la separación de la fase grasa 3 de la biomasa de cacao a un nivel graso deseado de la biomasa de cacao. Se refiere también a composiciones grasas que contienen dicha biomasa de cacao con una fase grasa modificada y productos comestibles que contienen dicha biomasa de cacao con un perfil graso modificado, y usos del proceso.
