Abstract

Comestibles preparados usando 1,3-propanodiol pueden incluir perfiles de sabor modificados respecto de comestibles comparables que no incluyen 1,3-propanodiol. Reivindicación 1: Un comestible que comprende: un componente que contiene grano entero que presenta un perfil de sabor; y aproximadamente 0,05 hasta aproximadamente 5% en peso de 1,3-propanodiol sobre la base del peso del componente de grano entero, estando el 1,3-propanodiol presente en una cantidad efectiva para modificar el perfil del sabor del componente de grano entero en comparación con un comestible comparable que contiene la misma cantidad del mismo tipo de componente que contiene grano entero, pero que no contiene 1,3-propanodiol. Reivindicación 6: El comestible de la reivindicación 1 en el que el componente de grano entero se seleccionó del grupo que consiste de trigo, avena, cebada, maíz, arroz integral, farro, espelta, trigo almidonero, centeno, quínoa, amaranto, triticale, trigo sarraceno y combinaciones de los mismos.
