Abstract

La presente se refiere a una composición alimenticia concentrada que comprende agua, sal y pectina para preparar un caldo, una sopa, una salsa, una salsa de jugo de carne o un plato sazonado. El propósito de la presente es proveer una composición alimenticia concentrada en forma de gel a temperatura ambiente y que tiene forma estable a niveles altos de sal, mientras que el incremento en la viscosidad ante el enfriamiento de la composición alimenticia concentrada diluida es muy bajo. Se ha encontrado que es posible obtener una composición alimenticia concentrada en forma de gel estable cuando el concentrado comprende agua, sal de sodio material vegetal triturado, pectina y sal de calcio, en donde parte de dicha pectina está ligada a dicho material vegetal triturado, y parte de dicha pectina no está ligada a dicho material vegetal triturado (pectina libre), y dicha pectina libre y dicha pectina ligada están presentes en una relación que abarca desde 0,2 hasta 200.
