Abstract
La invencion se refiere a un procedimiento para elaboracion de embutidos a base de carne de pescado, en donde la carne de pescado se procesa junto con hielo a una masa de carne molida base para embutidos. La invencion prevé que el hielo presente una temperatura menor de -10°C y que por lo menos una parte de la carne de pescado provenga de un bagre de agua dulce de la familia Heterobranchidae.
